The ingredients needed to make Turkey noodle stir-fry:

  1. {Get of dried rice noodles (I use brown rice noodles).
  2. {Take of brown/cooking onion, diced.
  3. {Take of finely grated ginger.
  4. {Make ready of turkey mince. You can also use chicken or pork mince.
  5. {Get of frozen mixed vegetables, thawed. I used a carrot, broccoli, sugar snap pea mix.

Recently we decided to mix things up a bit by getting some turkey mince instead and serving it in a yummy udon noodle stir fry full of Szechuan pepper kick and soy and miso umami. Stir-frying is considered a Chinese cooking method where ingredients are fried in a small amount of oil, over very high heat. Normally, a wok is used as the cooking vessel although a cast-iron pan works well to conduct high heat, too. Just to let you know: I've reintroduced some grains, which aren't strictly paleo.

Instructions to make Turkey noodle stir-fry:

  1. Cook noodles in a saucepan of boiling water for 5 mins. Drain after the 5 mins.
  2. Heat a wok or large frying pan and add oil. Swirl to coat wok and add onion and ginger. Stir fry for 2 mins or until tender.
  3. Add mince to wok, break up lumps as you stir for five minutes or until mince is brown..
  4. Add vegetables, oyster sauce, soy sauce and five spice, stirring for another 2 minutes..
  5. Snip drained noodles to shorten, add to wok with chilli and coriander, tossing to combine..
  6. You can serve on top of rice if you wish. Serve and garnish with coriander leaves.

As you know by now, I love Asian flavours. I love crispy pork, turkey or chicken fried with soft glossy veggies, a tangle of noodles and a slick of nutty sesame oil. Juicy sliced turkey, bell pepper, onion and tender rice noodles sizzle with a creamy and balanced peanut sauce seasoned with kecap manis, fish sauce, sesame oil and spicy sambal. Finished with lush Thai basil, cilantro, crunchy bean sprouts and peanuts, this saucy noodle stir fry is a Fresh Prep. Heat the oil in a wok, and add the garlic, ginger, spring onion, mushrooms and asparagus.
